The juice is slightly earthy and very natural in taste, fresh and lively. It is pressed from ripe hand-picked mountain apples of the Gravensteiner variety, which has long been a familiar sight in the orchards of South Tyrol, having arrived by chance in the 18th century and stayed over the years out of love. Medium-sized to large, yellow when ripe, with medium-firm, very juicy flesh.

with raw fish, seafood, shellfish, thickened cream soups.
